Phosphate mixtures

General information 

Some phosphates already have a very high functionality. If phosphates are mixed, synergies result and the effect is improved. These effects are used in particular in meat processing and in the production of processed cheese. In addition to a selection of standard mixtures, we also offer customer-specific solutions.   


Properties & advantages 

In meat processing, phosphates replace the natural ATP in the muscle, which breaks down quickly after slaughter. This has a positive effect on the freshness, water-binding capacity, texture, colour retention and emulsifying properties of sausage products and reduces cooking losses in ham and convenience products. Sausages become crunchy and hams juicy. 

In processed cheese production, phosphates as melting salts prevent protein denaturation and phase separation. They therefore act primarily as emulsifiers and, in combination with citrates, influence the consistency of the processed cheese and its processability. Various products such as spreadable cheese, blocks, cheese slices, grated cheese, sauces, heat-stable products, e.g. for fillings (cordon bleu, cheese casserole,...) etc. are produced.
